Gelato Affogato with Caramel & Panna Cotta

Affogato means “drowned” in Italian, and the classic version is one of the simplest desserts there is: a shot of hot espresso poured directly over a scoop of gelato, melting it into something between a drink and a dessert. It’s a favorite for a reason: two ingredients, no fuss, big payoff.

But simple doesn’t mean fixed. Chef Flavio Tagliaferro took the concept as a starting point rather than a finished recipe, and asked the question every good chef asks of a classic: what else could this be?

His answer draws on two ideas at once.

The first is a Roman tradition: squeezing lemon oils into espresso, a small ritual that brightens and perfumes the coffee before it ever meets the gelato.

The second is the twist at the heart of this dish. The affogato concept itself, pushed further. Underneath the Gelato al Caffè sits multigrain bread, two squares tucked beneath the scoop. Warm panna cotta is poured over the top, and salted caramel finishes it off.

By the time you get to the bread, it’s soaked through. Coffee, gelato, panna cotta, caramel, all of it. Same idea as a classic affogato. Completely different experience.

WHY THIS WORKS

The lemon oil isn’t decoration. It cuts through the richness of the espresso before it even reaches the gelato, so the coffee flavor stays bright instead of going flat once it melts everything down.

Layering warm panna cotta on top of the gelato, rather than pouring espresso straight over it, slows down the “drowning” effect of a classic affogato. The result holds its structure a little longer, so you get distinct textures: warm, cool, and creamy, before it all comes together.

And the multigrain bread underneath isn’t just a base. It’s the payoff: it catches everything as it melts, so the last bite is the most concentrated one, saturated with coffee, caramel, and cream all at once.
