Ingredients for No-Bake Chocolate Oatmeal Bars

You only need 6 simple ingredients for these bars:

  • Butter – cut it into small cubes so it melts faster and more evenly.
  • Light brown sugar
  • Vanilla extract
  • Quick-cooking oats – use quick oats for the best texture.
  • Chocolate chips – you can also use finely chopped chocolate instead.
  • Peanut butter – creamy or crunchy both work

How to Make No-Bake Chocolate Oatmeal Bars

Ingredients for No-Bake Chocolate Oatmeal Bars with peanut butter and chocolate
Six simple ingredients: butter, light brown sugar, vanilla, quick oats, chocolate, and creamy peanut butter.
  1. Start by lining a 9×9-inch pan with parchment paper, leaving enough overhang on the sides so you can lift the bars out easily later.
  2. Melt the butter and brown sugar together in a saucepan, stirring until smooth. Stir in the vanilla, then add the quick oats and cook for about 3 minutes, stirring the whole time.
  3. Press half of the oat mixture firmly into the bottom of the pan. While that layer cools a little, melt the chocolate chips and peanut butter together until smooth and spread the filling over the oat base.
  4. Crumble the remaining oat mixture over the top and gently press it down. Chill the bars for 2–3 hours, until completely set, then lift them from the pan and cut into squares.

Tips for the Best No-Bake Oatmeal Bars

  • Use quick-cooking oats. They work better here than old-fashioned oats and give the bars a more even, chewy texture.
  • Press the bottom layer firmly into the pan. This helps the bars hold together and makes them easier to cut later.
  • Use parchment paper with overhang. It makes lifting the whole slab out of the pan much easier.
  • Creamy or crunchy peanut butter both work. Use whichever you prefer.
  • Chill until fully set. Chill the bars for at least 2–3 hours before cutting.
  • Use a thin, sharp knife for slicing. It gives you cleaner, neater bars without crushing the oat layers.
  • Store in the refrigerator. Keep the bars in an airtight container to keep them firm and fresh.

Frequently Asked Questions

Can I use old-fashioned oats instead of quick oats?

I recommend quick-cooking oats for this recipe. They soften faster and give the bars a more even, chewy texture. Old-fashioned oats are larger and can make the oat layers a bit rougher and more crumbly.

Can I freeze No-Bake Chocolate Oatmeal Bars?

Yes. These bars freeze well. Store them in an airtight container, then let them thaw for about 10 minutes before serving.

Ingredients

  • 1 cup (226g) butter, cubed
  • 1/2 cup (100g) light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 3 cups (255g) quick-cooking oats
  • 1 cup (170g) chocolate chips
  • 1/2 cup (125g) creamy peanut butter

Instructions

  1. Line a 9×9-inch baking pan with parchment paper, leaving enough overhang on the sides to easily lift the bars out later.
  2. In a medium saucepan, melt the butter and light brown sugar over medium heat, stirring until smooth. Remove from the heat and stir in the vanilla.
  3. Add the quick-cooking oats and return the pan to the heat. Cook for about 3 minutes, stirring constantly.
  4. Press half of the oat mixture firmly into the bottom of the prepared pan. Let it cool slightly while you prepare the filling.
  5. Melt the chocolate chips and peanut butter together, stirring until completely smooth. Spread the chocolate peanut butter mixture evenly over the oat layer.
  6. Crumble the remaining oat mixture evenly over the chocolate filling.
  7. Refrigerate for 2–3 hours, or until completely set. Use the parchment overhang to lift the bars from the pan, then slice and serve.

Notes

For the best texture, use quick-cooking oats rather than old-fashioned rolled oats. They soften more easily and help the bars hold together better.

You can use either creamy or crunchy peanut butter, depending on the texture you prefer.
